- 2 tbsp flour
- 1/4 tsp salt
- 1 large egg white (or use a whole egg)
- 2 tsp. water
- 1/4 cup Panko bread crumbs
- 1/4 cup Italian bread crumbs
- 1/4 cup grated parmesan
- 1 tsp garlic powder
- 1/2 tsp paprika
- 2 tsp dried or fresh parsley (chop finely)
- Turkey breast cut into cutlets and pounded between saran wrap or wax paper
- 2 tsp olive oil

Instructions
- Whisk together bread crumbs, parmesan, garlic powder, paprika, black pepper and parsley.
- Whisk together egg and water.
- Working one cutlet at a time, dip both sides in flour mixture then into egg mixture followed by the bread crumbs. Pat gently to coat both sides.
- Place large non stick skillet over medium heat. When a drop of water sizzles add the oil. Pan fry 3 minutes on each side, or until golden brown.
- Put cutlets in preheated oven if thicker cutlets. Place meat thermometer and cook to 155 degrees. Let sit on counter for 15 minutes.
