Ranch left over Turkey or chicken wrap: makes 4-6
  • 2cups chopped cooked turkey or chicken
  • 2cups baby spinach or slivered lettuce
  • 1/2cup diced red bell pepper
  • 1/2cup kernel corn—preferably cooked fresh corn taken off the cob
  • 1/4cup sliced green onion
  • 1/4cup ranch salad dressing—I prefer refrigerated dressing in the produce dept
  • 6 flour tortillas
  1. Combine poultry, spinach, red pepper, corn, green onion and dressing. No red pepper—grated carrot and slivered cucumber is very nice too.
  2. Cover wrap with spinach leaves and spoon filling down centre of each tortilla. Fold bottom and top edge of each tortilla one inch over turkey mixture. Roll up. Cut in half or eat whole.
